Try this easy meal for any BBQ! Labor Day, Memorial Day, Fourth of July or just a fun fulled summer Saturday! Try these locally sourced veggie-chicken kabobs:
TOTAL TIME: 15-25 minutes
YIELD: 4 Servings (approximately 8 Skewers)
1 package boneless skinless chicken breasts, cut into 1-inch cubes
1 cup of your favorite Italian salad dressing, divided
1 medium zucchini, cut into 1/2-inch slices
2 medium onions, quartered
1 medium sweet red pepper, cut into 1-inch pieces
1 medium sweet orange (or green or yellow) pepper, cut into 1-inch pieces
2 Package cherry tomatoes
*1/4 cup olive oil
*1 teaspoon garlic powder or onion powder
*1/2 teaspoon dried rosemary, parsley, Thyme or other herb, finely chopped
1. In a plastic bag, combine chicken and 1/2 cup salad dressing. Seal bag and turn to coat; refrigerate for 15 minutes.
2. In another plastic bag, combine the salad dressing and any other herbs or seasonings. Add vegetables, seal the bag and toss to coat.
3. after 15 minutes drain chicken and vegetables (reserving marinades) and arrange on skewers.
4. Grill final Kabobs, uncovered, over medium-hot heat for 12-15 minutes or until juices run clear, turning and basting occasionally with remaining salad dressing.
